Mujadara
This is a simple and delicious and super nutritious recipe. Found it on a great recipes blog and adopted it! Mujadara is a very common classic Arabic recipe featuring cooked lentils and rice and caramelized onions. It’s a delicious vegan main dish!
Ingredients:
- 1½ cup rice, rinsed and drained
- 1½ cup brown or green lentils
- 3 cups of boiling water
- 2-3 tablespoon extra-virgin olive oil
- 1 teaspoons cumin
- 1 teaspoons turmeric
- ¾ teaspoons salt
Caramelised onions:
- 2 (or more) large chopped onions
- 4-5 tablespoon extra-virgin olive oil
Instructions:
Wash thoroughly rice and lentils and drain.
Boil the lentils for about 15 minutes and drain. The lentils should be not fully cooked. My trick (credit to my sister in law) is to use the lentils water to cook the rice, it adds a great taste.
In a wide heated pot, add olive oil. Add turmeric and cumin. Fry the spices for a minute while stirring so the flavors will spread. Add rice and lentils and stir for 2 minutes to keep them from sticking to the bottom. Add boiling water (or the lentils boiled water) and salt and stir. Cover the pot (entirely) and cook on the smallest flame for 20 minutes. Let it rest for 10 minutes.
While the rice and lentils are cooking, heat a frying pen with olive oil and add the onions. Keep stirring until the onions is caramelized. It will take a while so be patient 🙂
When the rice is ready pour the caramelized onions inside and stir to combine.
serve hot.
