Vegan pancakes
These perfect vegan pancakes will be a success every time you’ll make them! kids just love them and also kids at heart like myself 😊 I always double the amounts when I prepare them for my 4 kids.
They’re great for breakfast and great for a light dinner and great for an outdoor picnic.
You can make them chubby like in the photo or smaller for more pancakes. I usually use an amount of a regular tablespoon from the blend, the size is perfect for the little ones this way.
The recipe for vegan pancakes is based on Natalie Houlding’s recipe (Highly recommended! there are more great recipes in there).
Ingredients:
- 1 cup flour (I prefer spelt flour)
- 1 cups plant-based milk
- 2 tablespoons sugar
- 1 1/2 teaspoon baking powder (aluminium free)
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
Instructions:
- Preheat a non-stick pan. You can also put some coconut oil if you don’t have a non-stick.
- Put all the ingredients in a bowl, start with the dry ingredients and continue with the wet ingredients and whisk them all together to a solid mix.
- Scoop a tablespoon full of mix in the pan in the size of your choice.
- When bubbles show on top of the pancakes, flip them and fry for another 2-3 minutes, and put them out of the pan.
