Vegan chocolate chip cookies
Everybody who tastes these amazing cookies declares they are the best vegan chocolate chip cookies they ever ate, or even the best cookies they ever ate in general ❤️🙏
The greatest part is that they are super easy to make!

You can make them in any size you personally like. I usually make about 30 in one baking pan.
Ingredients:
- 1 cup of white flour or white spelt flour
- 1 cup of whole wheat flour or whole spelt flour
- 1 heaping teaspoon of baking powder, aluminum free
- 1/4 teaspoon of salt
- 1/2 cup of soft or liquid coconut oil
- 1 cup of brown sugar
- 4 tablespoons of sugar-free apple sauce
- 1 tablespoon of vanilla extract
- 1 cup of vegan chocolate chips
*** I usually use only whole wheat flour or whole spelt flour (which is unfortunately hard to find in Costa Rica).
Instructions:
- Heat the oven to 180 degrees.
- Mix flour, baking powder, and salt in a bowl.
- In a separate bowl, mix coconut oil, sugar, apple sauce, and vanilla extract well until the mixture comes together.
- Gradually add the dry ingredients to the sugar mixture and mix until obtaining a uniform and soft dough.
- Add chocolate chips and mix with your hands until combined.
- Make flat cookies of the desired size from the mixture (keeping in mind that they expand) and place them in a spacious manner on a baking sheet lined with parchment paper.
- Bake for about 10 minutes, until the cookies are golden and firm but still a bit soft.
- Allow the cookies to cool completely before transferring them to an airtight container.
